i'd also like to draw your attention to the very entertaining comment-thread in the post about the gumtree (?) seedling. there is triffidy goodness.

Well, I've booked my flights now, as I gather from my inbox Cassandra has told you... I will send the details.

But, first, the long promised, long witheld, long awaited recipe for:
Risotto with Forest Mushrooms and Sage

Preparation time - 5 minutes
Cooking time - 20 minutes
total time - wait for it - 25 minutes (phew, bet you're glad you didn't get out your calculator!)
Serves 4

1 Litre vegetable stock
125g butter
1 tablespoon olive oil
1 garlic clove, crushed and chopped
1 onion, finely diced
250g forest (wild) mushrooms, eg. morels, porcini, chanterellles, common open mushrooms, or eponnee rae specials, halved or quartered. (I actually used 200g chestnut mushrooms and 50g porcini mushrooms (which had been 25 g dried porcinis). It was good.
300g arborio or carnaloni rice
75 ml dry white wine
1 tablespoon chopped sage (or considerably less if using dried sage)
salt and pepper
125g parmesan cheese, freshly grated, to serve
Truffle oil, to drizzle (optional - no idea what it tastes like, couldn't find any.)

ONE Place the stock in a saucepan and simmer gently
TWO Melt half of the butter with the oil in a heavy-based saucepan, add the garlic and onion and saute gently for 3 mins
THREE Add the mushrooms and cook gently for 2 mins. Add the rice and stir well to coat each grain with the butter and oil. add enough stock to just cover the rice and stir well. Simmer gently, stirring frequently.
FOUR When most of the liquid is absorbed, add more stock. Continue adding the stock in stages and stirring until it is absorbed.
FIVE Add the wine, remaining butter, sage and salt an pepper and stir well. Serve with Parmesan and drizzle with truffle oil, if liked.
